We always seem to gravitate to Honey Island Swamp Tours and then Cajun Encounters.

Yup, I second both of those recommendations. The Honey Island Swamp area in general is quite good.
In case it makes a difference, the Honey Island Swamp tour company is not doing morning tours right now, but Cajun Encounters are doing both mornings and afternoons.
It will be a Saturday for our tour day. Do they both operate on saturday?
